No matter how many times I’ve cooked rice, I quite often end up with too much and having a portion or two left over. We always eat our leftovers – but it’s sometimes hard to make them into anything appetising the day after.
So 200g of cooked white rice posed a challenge one lunchtime recently. It needed eating, but required glamorising for the purpose. I had a dig in the fridge to see what other ingredients needed using up before I next went grocery shopping. I made the salad, but decided to jazz it up further with a tangy tahini-based dressing, which works really well with the orange flavour from the nectarine. It’s nice to enjoy some tasty salads before the Autumn arrives and I feel like stewing and roasting instead…
Glamorous Rice Salad with Orange and Sesame
Preparation time 10 mins (when using pre-cooked rice)
200g/7oz cooked rice
½ white onion, finely chopped
½ red pepper, finely chopped
3 artichoke hearts, chopped
1 nectarine or satsuma, chopped
1 handful mixed leaves, chopped
2 tbsp toasted sesame seeds
2 tbsp tahini paste
1 tbsp rice mirin
2 tbsp lemon juice
½ tsp chilli sauce
Salt & pepper to taste
1. Mix together all salad ingredients in a serving bowl.
2. Place dressing ingredients in a small bowl and beat with a small whisk or fork until smooth.
3. Drizzle dressing over the salad and serve.
