Root and Apple Soup

As the leaves are burning the bright fiery colours of Autumn on the trees along our seafront, I’ve been making soups nearly everyday. One of the best things about soup is that you can utilise just about anything you have in your cupboards or fridge and pop it into the mix.

Yesterday I made a very simple Carrot and Potato Soup, with Miso and a hint of Ginger. Today’s was a heartwarming Root & Apple Soup, made from parsnips, carrots, onion and apples from our family’s garden.

Teamed with some homemade bread, fresh soup is such a tasty, nutritious and cheap lunch. So here’s my general formula for making soup out of just about anything (veggie of course).

Soup formula
Makes about 4 portions

1 onion, chopped
1 clove garlic, crushed
Fried in 1 tbsp olive oil.

Then add:
Approx. 500g of chopped vegetables of your choice or protein eg. lentils, beans (or half & half).
Fry for a couple of minutes.
Add 1 litre vegetable stock, plus seasonings (salt, pepper, herbs/spices).

Bring to boil, turn down, cover to simmer for 1 hour. Blend if desired.
Add extra water or a splash of soya milk to thin-out or make a little creamy.


  • Roast veg first for an extra flavoursome soup
  • Don’t add salt if using veg stock that already contains it
  • Use shallots instead of onions for a stronger flavour
  • Don’t add soya milk or cream into very hot soup; it may curdle, so let it cool a bit first
  • Simmer/roast veg the night before so flavours have time to develop
  • Invest in a hand blender, for speed & convenience

Here’s today’s recipe as an example:

Root & Apple Soup
Makes 4 portions
Preparation/cooking time 1 hour 10 mins

1 onion, chopped
1 clove garlic, crushed
1 tbsp olive oil
2 parsnips, peeled and cubed
2 cooking apples, peeled and cubed
1 carrot, peeled and cubed
1 litre vegetable stock, veg Oxo for example, or bouillon
Pinch ground black pepper
Pinch chilli powder

1. In a large saucepan, fry the onion and garlic in the olive oil until soft.
2. Add the vegetables and apples and continue to cook, stirring for a few minutes. Add a pinch of pepper and chilli powder.
3. Add in the hot stock and bring to the boil. Turn down, cover and simmer for an hour. Stir occasionally.
4. Blend with a hand blender, then add soya milk or water to thin out to desired consistency.
5. Serve.
